In 2019, Eataly implemented Microsoft Dynamics 365 for Finance and Operations as its ERP Financial platform, replacing Microsoft Dynamics AX for core finance and operations functions. The project was scoped to support Eataly’s large format Italian marketplace model, including restaurants, food and beverage counters, bakery operations, retail merchandise and a cooking school, and was executed by a 20 person implementation team.
The implementation covered an end to end deployment of Microsoft Dynamics 365 for Finance and Operations, with consultant-led configuration and functional extensions. Development followed an extensions-first approach, avoiding over layering, and included custom feature extensions and new add-ons to align the application with Eataly’s operational requirements. Technical design documents were produced to standardize the customizations and guide development and testing.
Integrations were implemented using developed data entities to exchange information with third party systems, providing structured inbound and outbound data flows for transactional and master data. The rollout focused on finance and operational workflows consistent with ERP Financial deployments, supporting accounting, financial reporting, procurement and inventory related processes across Eataly’s retail and food service units.
Governance and adoption activities included creation of technical design documentation, delivery of demos, online training sessions, and post go live end user support. The project included two months of onsite knowledge transfer in Italy for end user training, and ongoing issue resolution support was provided to stabilize the environment after deployment.
