Front line responsibilities executed through the system included creation and revision of estimates, generation of BEOs, event timelines, menu tasting coordination, and production of event resumes. The implementation also structured workflows for negotiating vendor packages, enforcing food and beverage minimums, and tracking individual sales performance tied to catering revenue. The implementation integrated Amadeus Delphi with Social Tables to produce event diagrams and seating layouts, using Delphi and Social Tables together to generate BEOs and diagrams. Operational coverage encompassed Catering Sales, Banquets, Kitchen, and vendor coordination at the Del Mar site, with Delphi acting as the central repository for client communications, vendor quotes, invoices, and event documentation. Governance and process changes formalized lead follow up, site visit scheduling, contract negotiation and execution, invoicing and payment follow up, and event day coordination, with the Wedding Manager and Catering Sales Manager accountable for measuring the success of weddings and social events. The rollout emphasized maintaining organized client files and a client database to ensure consistent production of event orders and coordinated execution between sales and operational teams.
