Operational scope covered North American order management operations and centralized processing for order management teams to reduce labor intensive order handling. Governance centered on centralized monitoring via Esker dashboards and a North American rollout announced in 2018 to align process controls and visibility. The implementation specifically targeted improved end to end visibility, reduced manual order processing, and increased processing speed through automated workflows as described in the project brief. | |

The implementation targeted bakery production shop floors within the United States and was scoped to replace paper records with realtime electronic capture to support audit readiness and recall responsiveness. The SG Systems V5 Formula System implementation delivered batch control and traceability modules across receiving, weighing rooms, mixers and finished product lines, and implemented end to end batch genealogy and realtime shop floor data capture. Functional capabilities included batch-level lot tracking, shop-floor transaction capture for ingredients and intermediates, and automated genealogy reporting consistent with Traceability Management workflows. The deployment integrated with SAP to enable wireless sales order processing and to propagate batch and lot data into enterprise order and inventory records, supporting a single recorded lineage from receipt through finished goods. Wireless shop floor devices and automated data capture points were used to synchronize batch events into the SG Systems V5 Formula System and the SAP environment, enabling traceability queries and order processing across US operations. Governance and process changes centered on removing paper based records and instituting electronic batch records and recall procedures, with the project explicitly reducing manual audit tasks and enabling rapid supplier lot recalls across the US. The SG Systems V5 Formula System is recorded as the core Traceability Management application supporting Bimbo QSR production control, batch genealogy, and wireless order processing after the June 2012 rollout. | |
