In 2025, Al Hatab Foods implemented SAP Digital Manufacturing, a Manufacturing Execution System, to digitize and orchestrate shop-floor operations across four factories and five distribution centers in the Kingdom of Saudi Arabia. The deployment targeted core food production workflows including formulation, batching, portioning, packing and traceability for products distributed to more than 100 retail stores and national distribution sites.
SAP Digital Manufacturing was configured with core modules for Formulation Control, Batch Correction, Packing Optimization, Milestone Confirmation and Mass Assignment, while partner-developed capabilities extended the platform with Target Dynamic Optimization and Mass Operator Assignment. Portioning and Target Dynamic Optimization were built on SAP Business Technology Platform, enabling dynamic tolerance optimization and operator-specific adjustments to improve portion accuracy and reduce material giveaway.
The architecture integrated SAP Digital Manufacturing end-to-end with SAP S4HANA and shop-floor hardware, including Mettler Toledo scales, and incorporated QR scanning, FEFO compliance, automated tolerance checks, supervisor approvals for batch correction, and real-time recalculation of ingredient qualities. Production Operator Dashboards supplied real-time visibility into batch uniformity and genealogy, milestone confirmations were replicated from SAP S4HANA to enforce correct sequencing, and mass assignment streamlined bulk allocation of operators, scales and materials.
Governance and rollout followed a co-innovation model with partner Stellium, which provided domain expertise, custom add-ons and shop-floor integrations, and SAP Customer Success Manager engagement addressed mission-critical pre go-live escalations.
